I have a custom field created. Using one of the DATE fields #11.
When I edit the download details in the Administrator Form & the Front End form and use the date picker, it initially adds it to the field correctly. Save the download details and it immediately decrements 1 day.

What date format do you have selected in Config - Downloads - Long Date-Time format and Short Date-Time format?
Which time zone are you in?
When you set the date was it near midnight as sometimes the Server might use UTC time which can differ by some hours causing an apparent date change. It can also depend on the Locale settings in your PC
